Zucchini Basil
A quick recipe that is fresh and delicious. It could easily be made for breakfast or as a side for dinner or lunch

Two Zucchinis - cut in half then sliced lengthwise
One medium size or 5-8 cherry tomatoes chopped
Basil at least 8-10 leaves chopped
(optional) - Garlic 3-4 cloves finely chopped
Oil (any) 1 teaspoon

Add oil to a pre-heated pan. Add the above veggies and stir. Cook on high heat for not more than 5 minutes. Add fresh basil at the end and cook for another 30 seconds. Serve. Add salt and pepper to taste. Garnish with more of the fresh basil
It could be served with a toast, bread roll, pasta, salad, soup or by itself.
