Beets and Peanuts
(for a breakfast, side dish or snack)

Ingredients

Orange beets, medium size - 2
Raw unsalted peanuts - a handful
salt - a pinch
cumin- 1 teaspoon
Oil - 2 teaspoon
Fresh lime/lemon

Slice 2 orange beets and take a handful of raw unsalted peanuts

Add oil to the heated pan. Roast raw unsalted peanuts for 1-2 minutes

Coarsely grind one teaspoon of cumin

Add beets & ground cumin to the pan. Add a pinch of salt. Stir. Cover and cook on low heat for 10 minutes.

Add lime juice for more flavor
Wash and slice the beets. Heat a pan and add oil after the pan is heated. Add a handful of peanuts to the pan and roast them till they start to give off a pleasant aroma and few of them start to turn light brown (1-2 minutes).
Add beats.
Coarsely grind about 1 teaspoon of cumin and add to the beets and peanuts. Add a pinch of salt, stir and cover the pan. Cook for about 10 minutes on low heat. It is important the heat be low or the beets will stick to the pan. Due to the added salt, beets will cook in there own juice.
Serve hot and add some lime juice for more flavor.
