Orange beets with peanuts

Slice orange beets.
In a frying pan, on low heat, cook the sliced beats with 1 tablespoon of water. Check in 2 minutes and sprinkle more water if the pan is dry. Cook another 2-3 minutes.
Add peanuts (roasted, unsalted)
Add salt to taste
Add roasted cumin if available.
Squeeze fresh lemon.
Mustard Greens

sauté onions in small amount oil in a frying pan.
Add garlic, stir for few seconds, then add corn (frozen or fresh)
Let it cook on low heat 2-3 minutes
Coarsely chop mustard greens and add to the pan. If the ingredients in the pan have dried out, sprinkle 1 tablespoon of water. Let everything cook for 2-3 minutes.
Add boiled black beans. Mix.
Turn off the heat.
Add salt to taste and squeeze fresh lemon juice.
Oatmeal with dates and figs

Cook thick rolled oats or steel cut oats in water. Once cooked, add small amount of milk and cook another 2 minutes
Serve in a bowl.
Add chopped dates, figs and nuts. Sprinkle cinnamon.
Kale and sprouted mung salad

flavorful and nutritious, this salad is quite filling is good for breakfast or lunch.

Ingredients:
sprouted mung
Kale
Walnuts or any other nuts
Goat cheese
onion (optional)
Goat cheese
Salad dressing :
balsamic vinegar
olive oli
black pepper
honey or orange juice only f hint of sweetness desired

Cook kale covered in a pan by adding a tablespoon of water and cooking on low-medium heat for 5 minutes
Serve kale and other ingredients in a plate; add salad dressing and goat cheese.
